E. Coli Food Poisoning
E. coli 0157:H7 is a dangerous foodborne pathogen because it produces a shiga toxin, which causes painful symptoms in humans including:
- severe stomach cramps and stomach tenderness
- diarrhea (which may be watery or bloody)
- severe blood or kidney problems
- kidney failure
- long-term disability
In severe cases of E. coli poisoning, patients can develop hemolytic uremic syndrome (HUS) or thrombotic thrombocytopenic purpura (TTP). Both HUS and TTP are complications of E. coli that can cause kidney failure, brain damage, as well as damage to other organs and death.
